Good morning,
We hope that you had a great Memorial Day Weekend! It was a work weekend for us! We reopened the full yard and added more shade sails. In the little school studio, we added more child-size tables and stools, a changing table, and a desk for teachers. Mr. Jesse completed painting and resurfacing the concrete in the new classroom. With rain in the forecast this week, he is trying to nail the best time to complete the exterior painting. We have been assembling shelving and materials for the new room, all of which are in our dining area and living room! We are eager to get our home back in order.
On Wednesday and Friday this week, we welcome a few campers along-side our Drop Off students, a soft launch to our summer camps that begin in earnest next week.
The garden is loving all of the great rain-we planted okra, more cucumbers and tomatoes, tomatillos, beets, and carrots this morning with the children.
Over the weekend, we conducted a couple of successful recipe tests. Finally, we were able to make progress with sourdough croissants! American butter is quite different than the dry butter used at Le Cordon Bleu and in French bakeries, so it has taken some work! We are excited to add sourdough lemon rolls to this week’s menu. They are soft and fluffy, filled with butter, sugar, and lots of lemon zest. Once nearly cooled, they are topped with a tart lemon-vanilla glaze. Our family loves them! Bread orders are due tomorrow at 9am for Thursday and Friday pick-up (or delivery).
As you clear out those backpacks and bedrooms, we are happy to accept donations for our camps—please don’t buy anything knew! You can sign up to DONATE HERE, and there is a collection box on the front porch.
Have a great week,
Leslie, Olivia and Iris
“Breaducation”
Baguettes and other smaller breads are highly perishable. It’s not that they mold, but rather they get stale and hard quickly. In France, customers buy fresh bread daily for this reason. Freezing any unused bread is a great way to preserve it, but another tip is to soak the bread with water, wrap it in foil, and heat in an oven until soft. You can read more about this technique here. We’ve found that you must consume all of the heated bread…this technique doesn’t work twice on the same loaf!
